Birch syrup
Birch syrup is a sweet and tangy tree syrup made from birch sap, and produced in much the same way as maple syrup. The flavor profile of the syrup varies throughout the season and the early syrup can be used on pancakes, waffles and breakfast items while the later syrup is more often used as an ingredient paired with meat and seafood dishes in sauces, glazes, and dressings.
