Prunasin beta-glucosidase
In enzymology, a prunasin β-glucosidase (EC 3.2.1.118) is an enzyme that catalyzes the chemical reaction (R)-prunasin + H2O ⇌ {\displaystyle \rightleftharpoons } D-glucose + mandelonitrile It belongs to the family of hydrolases, specifically those glycosidases that hydrolyse O- and S-glycosyl compounds. The systematic name is prunasin β-D-glucohydrolase.
