Spritzgebäck (German: [ˈʃpʁɪtsɡəˌbɛk] ), also called a spritz cookie in the United States, is a type of biscuit or cookie of German and Alsatian-Mosellan origin made of a rich shortcrust pastry. When made correctly, the cookies are crisp, fragile, somewhat dry, and buttery.
