Vicianin beta-glucosidase

The enzyme vicianin β-glucosidase (EC 3.2.1.119) catalyzes the following chemical reaction: (R)-vicianin + H2O ⇌ {\displaystyle \rightleftharpoons } mandelonitrile + vicianose It belongs to the family of hydrolases, specifically those glycosidases that hydrolyse O- and S-glycosyl compounds. The systematic name is (R)-vicianin β-D-glucohydrolase.
