Pectin

Pectin (Ancient Greek: πηκτικός pēktikós: 'congealed' and 'curdled') is a heteropolysaccharide, a structural polymer contained in the cell walls and middle lamellae of terrestrial plants. The principal chemical component of pectin is galacturonic acid (a sugar acid derived from galactose).
